Included are cookies formed by hand into assorted shapes…usually molded into small balls or rolled into pencil-shaped ropes and then formed into various designs, such as wreaths or pretzels. Some cookies retain their shape during baking, while others flatten slightly and become crinkly on top.
2-1/4 cups sugar
1 teaspoon ground ginger
1 teaspoon ground cardamom
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon white pepper
1 cup butter, softened
2 large eggs
2 teaspoons vanilla extract
2-1/4 cups all-purpose flour
1/2 cup baking cocoa
2 teaspoons cream of tartar
1-1/2 teaspoons baking powder
1/2 teaspoon salt
Preheat oven to 350°.
In a large bowl, combine the first six ingredients. Remove 1/2 cup sugar mixture to a shallow dish.
Add butter to remaining sugar mixture; beat until light and fluffy. Beat in eggs and vanilla. In another bowl, whisk flour, baking cocoa, cream of tartar, baking powder and salt; gradually beat into creamed mixture.
Shape dough into 1-1/2-in. balls. Roll in reserved sugar mixture; place 2 in. apart on ungreased baking sheets. Flatten slightly with bottom of a glass. Bake 10-12 minutes or until edges are firm. Remove to wire racks to cool. Yield: about 3 dozen.
Stir together pecans, butter, 1/2 cup powdered sugar and vanilla, mix well. Sift flour and salt, stir into nut mixture. Chill. Roll into 1-inch balls, then roll each ball 3 times in the extra powdered sugar. Place 2 inches apart on cookie sheet. Bake at 350 F until set but not brown.
Heat oven to 375°F. Remove wrappers from chocolates.
Beat shortening and peanut butter in large bowl until well blended. Add 1/3 cup granulated sugar and brown sugar; beat until fluffy. Add egg, milk and vanilla; beat well. Stir together flour, baking soda and salt; gradually beat into peanut butter mixture.
Shape dough into 1-inch balls. Roll in granulated sugar; place on ungreased cookie sheet.
Bake 8 to 10 minutes or until lightly browned. Immediately press a chocolate into center of each
cookie; cookie will crack around edges. Remove from cookie sheet to wire rack. Cool completely.
